Round 2!!

I have been asked to host another round of meal swapping and I'm so ready!! It was really well last time and hopefully everyone who participated liked the meals!! Let's set the next round at the end of the month, Sat. March 31st. We can determine a time later or if we need to change the date by a few days just let me know, but plan on the 31st. Let me know if you are interested in this next swap. I'm also wanting to do two meals instead of one, if that is ok with everyone :) Let me know by the 20th, so it gives everyone time to make their meals!!

Cranberry Chicken Recipe

2 medium apples, cut into wedges

1 medium onion, chopped

2 pounds chicken breasts or thighs

The juice of two lemons

2 tablespoons quick cooking tapioca

2 tablespoons honey

1 can of cranberry sauce (or you can use fresh cranberries if they are in season)

Dump everything into gallon freezer bag and label. When ready to cook, dump into slow cooker and cook on high for 4 hours. Serve with rice or couscous.

First Freezer Meal Swap!!

So far I have only heard back from a few people to do the first round of swapping :) they are Megan m, Megan b, Cassidy, Rebecca, and tasha. Let me know for sure that you are in!! If we end up with just this list we can try to make just one recipe each and see how we like it. And maybe the next time we can do 2 recipes each, just depending on what everyone decides! this roun will each get us 6 meals when we swap one recipe. Anyways, let me know by Wednesday the 8th . Also let me know if there is a specific weekday that would work well with you. I was thinking of a sat, probably in 2 weeks? I think that is the 18th. Like I said, just let me know- also we need to know about the crockpots so that if people want to prepare crockpot meals we can do that :)

Freezer Meal Guidlines!

We can always change these but these are some things that I've researched that seems to work well. We also need to decide if we want to use 9x13 pans or 8x8 pans. Just comment and follow the blog to get more info as it comes :)

Guidelines:

All meals must feed a family of 2 adults and 4 children one serving each. These meals are not meant to be the ONLY thing on your family’s dinner menu, but it should be the MAIN part of the meal so the quantity should be satisfying.

When you are picking your meals you must do meals that have two different kinds of meat or one that is without meat. For example- Chicken enchiladas and Taco Soup (with ground beef) or a Veggie Lasagna and Pork Carnitas Burritos. This helps ensure that we do not end up with all the meals being of one kind of meat for that particular month.
To feed a family of six (and to ensure more equality in cost per meal with other swappers) make sure that dishes where the meat is the main ingredient (marinades, meatloaf, tacos, sloppy joes) use at least 1 ½ lb. meat.

Meals in a pan should be frozen in a 9x13 foil pan. Soups should fill a gallon sized Ziploc freezer bag. USE ZIPLOC BRAND BAGS. THEY ARE OF HIGHER QUALITY AND ARE LESS LIKELY TO OPEN AT THE SEAMS.

They should be covered with freezer foil and don't forget to write on the top of the foil or on the ziploc bag with a Sharpie (permanent marker) BEFORE it touches the food as it is almost impossible to do so after they are hot or have been frozen. Write the name of the food, baking or reheating directions and date.

To maintain some quality control- Do not make meals that you yourself have never made for your own family before. You and your family be the guinea pigs, not us. You make it for your own family and then if you guys like it you can make it for us too!

Because every family has different tastes it would be impossible to make a meal that all 6 families will love… o.k. maybe not impossible… I think this has happened once or twice. Just try to appeal to the majority. Let me just ask that we keep spiciness to a minimum. SOME Spice is o.k…. but SPICY HOT! Is not o.k. If it’s so hot that you have to drink milk with dinner then… it’s too hot. Regarding spicy: it’s better to err on the side of being too mild. We can add extra oomph! if need be.
If you have to switch your meal right before a swap, please let me know so that we can avoid duplication. Plus… I try to pick my meals last to see if we have too much of one type of meat and I can fill in where there is a need.
